Hard to say how long it would keep, I wou...Hi Lori! Hard to say how long it would keep, I would go by what is recommended on the brand of tofu you use for keeping once opened. As it's all fresh I would personally want to use it up in a few days. You could also halve the 'egg' recipe to make just 2 servings, I make double like that as the tofu I use comes in a 300g size so it's easier for me to make a double batch. I wouldn't recommend freezing however as I think the tofu texture might go a bit funny.
