Yeah, I wasn't too sure about oven baking ...Thanks! Yeah, I wasn't too sure about oven baking it, I was convinced the liquid wouldn't absorb and the grains would be hard but it does work. You don't get the creaminess of traditional risotto as you don't stir it but it's different and good in it's own way!
