Lemon Sesame Snaps

Vegan Lemon Sesame Snaps.

I saw these cookies on Pinterest awhile back and was immediately intrigued. I love sesame seeds, in fact sesame snaps are probably one of my favourite treats so I loved the idea of a sesame seed cookie.

They turned out beautifully - a crisp, buttery brown sugar cookie flavoured with toasted sesame seeds and lemon. Gorgeous with a cup of Earl Grey tea!

The recipe comes from All Recipes but I have made a few little changes. Obviously, I've omitted the egg. (For the record I tend to find if a cookie recipe only calls for 1 egg you can simply omit it with no problems). I also added a pinch of salt and some vanilla but mostly changed the method of making these cookies to the more traditional way of creaming butter and sugar first, then stirring in the dry ingredients.

Just one small note though - these are best eaten on the day they are made as they do get chewy the next day. That's not a terrible thing mind you, they are still very good - I certainly happily ate mine! You'll just have to call them lemon sesame chews instead - ha!

Now, I'm not suggesting you sit down and eat 18 cookies in a day, instead, maybe have some people over, throw a tea party, halve the recipe.... anything to enjoy them at their best, that is, just slightly cooled fresh from the oven :-)

Vegan Lemon Sesame Snaps.

Lemon Sesame Snaps
Yields approx. 18 small cookies

• 50g / ¼ cup vegan butter
• 80g light muscovado sugar / ½ cup lightly packed brown sugar
• zest of 2 lemons
• ½ tsp vanilla
• 70g / ½ cup flour
• 1/8 tsp baking powder
• pinch of salt
• 30g / ¼ cup sesame seeds

Preheat the oven to 180c / 350F. Spread the sesame seeds out on a baking sheet with sides and toast them for 10 minutes giving the pan a shake a couple of times.

Beat together the vegan butter, brown sugar, lemon zest and vanilla until light and creamy.

Whisk together the flour, baking powder and salt. Stir into the butter/sugar mixture until no more flour shows. Stir in the toasted sesame seeds.

Drop by teaspoons onto a baking sheet lined with baking paper and bake for 7 - 10 minutes. The edges on the cookies will just be starting to brown.

Remove and place the sheet on a wire rack. The cookies will be far too soft to move at this stage. Simply leave them to get firm on the baking sheet, this will only take 5 minutes or so. Once firm, transfer them to a wire rack to cool a bit BUT these are best eaten now!!

Get a pot of tea on, grab a book, curl up on the sofa and enjoy your time out :-)

Cauliflower and Walnut Salad with a Lemon Poppy Seed Dressing.

You know, I love cauliflower but have rarely (if ever) blogged with it. I usually just like to throw it into my macaroni and cheese with some zucchini and I always have some in my curries but nothing to really blog about...but I got it in my head to make a cauliflower salad and came up with this.

Lightly steamed just tender cauliflower, sweet carrot and crisp red onion is marinated in a lemon-poppy seed dressing then topped with crunchy toasted walnuts. It's a lovely, unique salad that went really well with a couple of slices of fresh from the oven garlic bread :-)

Cauliflower and Walnut Salad with a Lemon Poppy Seed Dressing
~serves 2 as a large main salad~

• 300g / 3 cups cauliflower florets
• 1 large carrot, grated
• ½ red onion, sliced
• ¼ cup walnuts
Dressing:
• 4 Tbsp extra virgin olive oil
• 2 Tbsp fresh lemon juice
• ½ tsp poppy seeds
• ¼ tsp salt
• ¼ tsp sugar
• freshly ground black pepper

Make sure the florets are of a fairly small size then steam until just tender. This should take no longer than 10 minutes, just fork test them now and again.

Meanwhile measure the olive oil in a small bowl. Slowly add the lemon juice whisking all the while. Whisk in the salt, sugar, poppy seeds and a few grinds of pepper. Taste and adjust seasoning if need be, because, hey, we're all different!

Tip the warm freshly steamed cauliflower into a large bowl and pour over the dressing. Mix gently using a rubber spatula until the cauliflower is well coated. Add the red onion and carrot and mix well. Cover with cling film and refrigerate to allow the salad to marinate and cool.

While the salad is chilling preheat the oven to 180C / 350F and place the whole walnuts on baking sheet with sides. Toast for about 7 minutes or until lightly golden and very fragrant giving the pan a shake now and again. Remove and roughly chop - not too fine. Leave to cool.

Once the salad is chilled dish up onto 2 plates and top with the toasted walnuts.

VEGAN Raspberry White Chocolate Mousse Cake.

Best cake I've ever made. I mean that. I know I post a lot of mousse cakes, I simply love them. I love mousse and I love cake. It's an easy marriage of flavours and textures for me. This cake has been in my head now for at least a year. I was inspired by this Iced Berry Mousse Cake on BBC Good Food and wanted to make something similar. I'm personally not keen on frozen cakes so made mine as a regular cake, kept the mousse just raspberry and added white chocolate, essentially so that the mousse would set, then covered the whole thing in an almond buttercream.

It's simply heavenly - A basic vanilla cake (which I've FINALLY made one I'm proud of) with a tart yet sweet raspberry mousse which is bursting with berriness and a proper moussy texture then covered in an almond buttercream which just goes so perfect with the raspberry flavour. I served it with a little extra raspberry coulis which is leftover from making the mousse and it's altogether to die for.

Now, the only thing I'm going to sugar coat here is the cake - as making this is both a little difficult and expensive. Yes, I've used some perhaps hard to find ingredients - vegan white chocolate and coconut whipped cream and to be honest, I don't know how replacements will fare. For both cost and time reasons this simply isn't the type of cake I can make a few times to experiment with! 


Day 1 - made the cake.
Day 2 - made the raspberry coulis then set it with agar.
Day 3 - made the mousse and assembled the cake.
Day 4 - let the cake set.
Day 5 - frosted and decorated.

You don't have to spend so long making it but it is easier when broken down into steps like that. I certainly wouldn't attempt to do it all in one day! Now, I'm afraid I was a bit of a bad blogger and didn't take any step by step photos but I'll talk you through it best I can!

VEGAN Raspberry White Chocolate Mousse Cake.

Vanilla Cake:

• 100g / ½ cup vegan butter
• 180g / ¾ cup white caster sugar
• 2 tsp vanilla extract
• 240g / 1¾ cup plain white flour
• 2 tsp baking powder
• ¼ tsp baking soda
• ½ tsp salt
• 125ml / ½ cup plain soy yogurt
• 125ml / ½ cup sparkling water
• 1 Tbsp apple cider vinegar

Preheat the oven to 180C / 350F. I used a 3.5" high 7" diameter loose bottom cake tin, lined the base with baking paper and sprayed the sides with cooking spray.

In a large bowl beat together the butter, sugar and vanilla until creamy. In another bowl sift together the flour, baking powder, baking soda and salt. In a large measuring cup whisk together the soy yogurt, sparkling water and vinegar.

Alternately add the flour and liquid to the butter mixture starting and ending with the flour. So you add 1/3 of the flour mixture then half of the liquid, 1/3 of the flour mixture, last of the liquid then last of the flour. Mix in with a rubber spatula using a quick folding in movement and only mix until well blended in after each addition - take care not to overmix.

Pour and scrape the batter into the prepared tin, level off the top and pop it into the preheated oven for about 40 minutes. It should be firm on top, bounce back a little when pressed on top and a wooden skewer inserted in the centre should come out clean with just a few crumbs attached. Remove from the oven and leave to cool on a wire rack, in the tin.

Once fully cool remove the tin and carefully slice the cake in half. I find it easiest to use a serrated knife and slice all the way around not cutting all the way through - just do the edges so you have an even cut. When you have sliced all the way around THEN cut all the way through. Carefully separate the two layers and wrap each in cling film. If you have done this a day or two before just leave them at room temperature.

Raspberry White Chocolate Mousse:

For the coulis:
• 500g frozen raspberries
• icing sugar to taste
For the mousse:
• 250ml raspberry coulis
• 1 Tbsp agar flakes
• 300ml coconut whipped cream
• 300g vegan white chocolate

I know I'll get asked some questions on the ingredients I used and possible substitutions so....

1. Use frozen raspberries that are just frozen raspberries - unsweetened with no syrup. You can use fresh but as this worked for me, I recommend frozen.
2. I used agar flakes, if using the agar powder the equivalent amount would be 1 tsp. Will it work? I don't know.
3. I used Soyatoo Cocos Whip which is a coconut based whipped cream. I usually make my mousse with their soy based one but I felt the coconut would be a nicer flavour in this as I tend to find the soy one quite beany and feel it needs a lot of dark chocolate and alcohol to mask the flavour. Texture wise I feel the soy version would work just fine here as it's easier to find. The Cocos Whip product is quite different from coconut cream from the cans mind you - I don't think that would work as the mousse will go really hard in the fridge.
4. The vegan white chocolate I use is by Sweet William. I can buy the buttons here but at only 25g per bag I was going to need a LOT to make this cake. I ordered the Sweet William bars from the Vegan Store in the UK (although, they don't seem to stock them at the moment) as they are 100g each and made up the 300g with 4 bags of the buttons. I can only vouch that this recipe will work with this brand. For the record I have never had success baking with the Organica White bar (although I love to eat it!)


Now, on with the mousse! First you need to make a raspberry coulis:

Place the raspberries in a large saucepan and bring to medium heat. Do not add any liquid as the raspberries will release their own juice. Stir now and again until the have defrosted and released liquid. Add some icing sugar to taste now but note - you want to keep this tart as you'll be adding a lot of very sweet white chocolate to the mousse later. I added 1/4 cup and it just took the edge off the sourness but left the mixture still tart. Depending on the sweetness of your berries you may not need to add any. Remember you can always add some icing sugar to the mousse once it is made.

Let the mixture cool slightly then place in a blender and blend until smooth. Now pour the mixture into a fine sieve over a large bowl and push the mixture through with the back of a spoon until it has all gone through leaving all the seeds. This will actually take longer than you might be thinking and a little muscle power!

Now that you have your coulis, cover it with cling film and chill in the fridge until cool as it will most likely still be warm at this stage.

Once cool, measure 250 ml of the coulis into a saucepan and sprinkle over the agar flakes. (Keep the leftover coulis in the fridge for serving with the cake.) Put the heat onto medium and let it come up to a simmer without stirring. Now stir it now and again while the mixture simmers for 5 minutes. Remove from the heat, pour into a bowl and leave it to set. I left mine out for about an hour then covered it with cling film and put it in the fridge.

Remove from the fridge and it should feel set. Take a spoon and beat it until smooth. As I had a few grainy bits I then pushed mine through a sieve a second time (it's easier at this stage) just to ensure it was really smooth.

To make the mousse:

Place the room temperature coconut whipped cream in a large bowl and whip it with a whisk for a couple of minutes. Break the chocolate into pieces and microwave until melted. Transfer the melted chocolate to another bowl so it can cool down faster. Take a spoonful of the set coulis and whisk it into the whipped cream, keep adding spoonful's and whisking until all the set coulis is added. You should have a vibrant pink looking mousse right now but remember - it won't taste very sweet at this stage!

Wait until the melted chocolate is close to room temperature before adding to the mousse. When you do add it try and pour it in slowly while whisking quickly all the while to ensure the chocolate does not seize up in the mousse - this is also why it is important to make sure the chocolate is not too warm. It helps to have someone else pour the chocolate in while you are whisking. Once all the chocolate is added, you have your mousse. Give it a taste and if you find it too tart you can add a bit of sifted icing sugar but do note that it will taste better once it has set.

Take the pan you baked the cake in and fully line it in cling film. Place one half of the cake in the bottom, pour and scrape all the mousse over top then place the other half of the cake over top - make sure you use the best looking, flattest half of the cake for this. Fold over the overhanging cling film to fully cover the cake and place in the fridge for the mousse to set.

Almond Buttercream

• 100g / 6 Tbsp vegan butter
• 1 tsp almond extract
• 520g / 4 cups icing sugar
• 3 - 5 Tbsp warmed almond milk

Note - this will make more buttercream than you actually need but it's better to have more than run out!

Beat the butter with some of the icing sugar then add the extract. Keep adding icing sugar, then some milk until all is added. Adjust with more icing sugar if too wet or a few drops more milk if too dry. You want a soft, spreadable frosting.

Remove the cake from the fridge and lift it out of the tin by the cling film. using a large flat spatula and taking care lift it up and off the cling film onto a cake stand or serving plate. Take a butter knife and smooth out any mousse that may be sticking out further than the cake, just so it'll be smooth when frosted.


The cake I based this on actually had no frosting, just a dusting of icing sugar and you certainly could just give it a dusting of icing sugar for a less sweet cake. As you can see, it still looks pretty darn good!


...or you could just the frost the top if you don't want to cover the whole thing in frosting.

BUT, I do recommend frosting the whole cake, don't overdo it, just enough to cover the cake will do. Save any leftover frosting for cupcakes or to touch up the cake - like when you are photographing it and your backdrop falls down on top of the cake (!) Yes, that did happen to me. Thankfully I got a shot of it whole before the big accident!

I then decorated the top with fresh raspberries in a simple heart shape and placed some more around the base as it looks nice and tidy.

For this 7" cake we got 16 small but satisfying slices out of it. To serve with the coulis, remember that you left the coulis tart to accommodate the white chocolate so you'll need to add a little sifted icing sugar to the leftover coulis to sweeten. Just whisk some in to taste.

VEGAN Raspberry White Chocolate Mousse Cake.To make the little heart designs I did on the plates there I placed a good size drop of coulis on the plate, fairly close together. I actually used a little plastic syringe - the type you get with children's Nurofen! In the middle of each blob I placed a drop of a mixture of plain soy yogurt sweetened with a little icing sugar. Then just take a toothpick or wooden skewer and run the tip right through each blob, making sure you drag the white bit through as well. It's actually so much easier than all this sounds!

Vegan Victoria Sponge Cake
I made this cake for my mother-in-law's birthday and it was soooo good, once more, I am so happy to finally have a vanilla sponge cake recipe that works. Tasty, light, fluffy and easy - yay!

I followed the cake recipe as is but split it between two 7" round cake tins lined with baking paper. Baked until golden and a toothpick comes out clean and left to cool. Made HALF the amount of the almond buttercream then simply spread raspberry jam in the middle with some of the frosting and frosted the top.

I served it with fresh strawberries in syrup - simply toss sliced strawberries with some sugar and leave for about an hour - they'll make their own syrup. If it's TOO liquidy simply drain it away and add half of the liquid back to the strawberries. 
That with some vegan vanilla ice cream makes for a perfect dessert :-)

Banana Raisin Bran Muffins

You know, I wasn't going to blog these, as good as they are I suddenly realized just how many banana based muffins I've blogged so far:


Then I figured, what the hell?! You can never have too many yummy vegan banana based muffins, right??

I like to think of these as a midway healthy muffin - they are not full on healthy like my Healthy Banana and Dark Chocolate Muffins which have no white flour, added fat or sugar. Nor are they as decadent as the almost cake like Banana White Chocolate Muffins. Rather these have a smaller amount of "all the good stuff" - plus lots of fibre, so are still healthy enough to eat guilt free - even for breakfast.

They taste great, just like you would imagine a banana bran muffin would taste like but rather surprisingly they are light as air - not something you tend to associate with a bran muffin! Lovely texture altogether.

I've not added any nuts here as my son would not go for that but I've left room for you to either add some chopped nuts or more raisins if you like, the recipe could take up to another 1/2 cup of whatever add in you like. Pecans, walnuts, or dates would all go nicely, although, I love them just the way they are.

Vegan Banana Raisin Bran Muffins.


 Banana Raisin Bran Muffins

• 1 cup / 140g white flour
• 1 ½ cups / 80g bran
• 1/3 cup / 60g light muscovado sugar (lightly packed brown sugar)
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ½ cup raisins
• 1 cup / 250ml plain soy yogurt
• 2 Tbsp walnut oil*
• 3 small very ripe bananas (between 230 - 260g total weight)
• demerara sugar - optional

* You can use any oil you like here. I've been loving walnut oil in baking lately as it just has such a nice flavour BUT the stuff is expensive.

Preheat the oven to 200C / 400F - Line a 12 hole muffin tin with muffin papers or as I used silicone muffin cases - I love these! Alternatively you could grease the muffin tin with a bit of oil.

Whisk together all the dry ingredients except the raisins then add the raisins and stir them in. You can add up to 1/2 cup more raisins or chopped nuts or dates here if you like.

Mash the bananas really well then add the soy yogurt and the oil and whisk until well blended.

Pour the banana/yogurt mixture into the dry ingredients and fold in with a rubber spatula until it all just comes together - do not overmix, be gentle! Note - the batter will be very thick.

Spoon into the prepared cases - fill them right up to the top as these don't rise massively. I now like to sprinkle a bit of demerara sugar on top of each muffin - it gives a lovely sweet crunchy topping. Now pop them in the oven and bake for about 20 minutes. They should be golden on top and a toothpick should come out clean.

Let cool in the tin on a rack for 10 minutes then remove from the tin to fully cool on a rack. I love these split open and spread with some vegan butter....a great breakfast with a cup of hot coffee :-)

Cointreau and Whiskey Cocktail

Cointreau and Whiskey Cocktail

This is such a nice cocktail! We had a couple of these after our Burns' night feast, which was a HUGE success by the way, I've updated my post with the changes I made included the incredible Whiskey Gravy I made to go with it - a new favourite for sure :-)

This is based on a recipe on the Cointreau website called the "Silent Third" (haha, great name!) but I've swapped the lemon juice with lime (much better) and upped the Cointreau just a tad which I feel balances out the sweet / sour aspect of the drink perfectly. Just a warning though - they are VERY drinkable and quite the hit!

Serves 1:

• 1.5 fl oz Cointreau
• 1 fl oz Whiskey (I always use Jameson's)
• 1 fl oz fresh lime juice, pulp strained out.

Fill a cocktail shaker halfway with ice cubes and add all the ingredients. Shake very well then strain into a martini glass. Sláinte!

Now, I'm going to have to ask you to ignore that the BBQ "chicken" there looks a little bit like steak tartare as this was an absolutely gorgeous sandwich!! (I've tried to "pretty it up" as best I could!) But seriously, saucy BBQ vegan chicken on top of 'buttery' garlic ciabatta with creamy avocado and crisp lettuce....it's a stunning sandwich taste wise ;-)

Naturally the snow, ice, frost and freezing weather had me craving summery food :-/ I'm kidding of course but I have decided there is no point blogging "seasonally" - as it was rightfully pointed out to me, some of my readers are currently sweltering in summer heat right now anyway! Although, in a weird way so am I.... 

You see our house has large south facing triple glazed eco windows and they are VERY efficient  When it's sunny, my kitchen and living room can get up to 26C even if it's snowing and freezing outside without ANY heating on. It's great! Yesterday was just such a day - frosty outside but brilliant sunshine. So, I sat there in my hot kitchen, eating this rather summery dish and sipping iced tea with the windows open and in short sleeves.... I swear my brain must get temperature confused sometimes!

Anyway, I'm not entirely sure where I originally got the inspiration for this sandwich. I feel I must have seen a meat version while scrolling through Pinterest and thought, hmmm, that would be nice all vegan'd up! I then searched around and found this one on the Baked Bree Blog and knew right away I would base mine on hers. 

First of all it's a stunning blog, the type that gives you pangs of blog jealousy! But crucially, she made hers exactly as I was thinking of making mine - with crispy ciabatta garlic bread - and OMG that makes this sandwich!! I just used my usual garlic bread spread recipe here and added slices of avocado and shredded iceburg lettuce. 

Personally I think the avocado is rather essential, it just goes perfectly with the slightly spicy BBQ sauce and garlic butter. As for the BBQ sauce, just use any vegan store bought one you like. I could have gone a bit fancier with one of those posher kinds you can buy now but I just went common as muck and used plain old Heinz BBQ sauce - with a dash of cayenne to give it a little kick ;-)

I couldn't decide what type of salad to have on the side of this but in the end I was just too swayed by her blog post and also did a cucumber and red onion type salad. I based mine on those vinegary Scandinavian type cucumber salads as I always loved them growing up. It's just thinly slices cucumber and red onion in a marinade of white wine vinegar, sugar, salt, water and fresh dill. It was really good but I think when I make this again I would make my Kohl-Slaw to go on the side. Vegan BBQ Chicken Rolls and Coleslaw? yes please!!! Oh, and don't forget the iced tea ;-)

Some Recipe Notes

♥ I used a 5" long ciabatta roll BUT cut it in half, so my roll was about 2.5" x 2.5".  In hindsight this was a little small but the full size would have been too big. I certainly used to be able to buy ciabatta rolls that were square - they would be the perfect size. Anyway, depending on the size of the ciabatta roll you use you may need to double the chicken filling and garlic butter.
♥ As mentioned above I just used plain Heinz BBQ sauce here but added a pinch of cayenne pepper.
♥ I used Fry's brand Vegan Chicken Style Pieces. As they come frozen you'll have to defrost them first. I just placed mine in a bowl and left them out for about an hour, then kept them covered in the fridge until I was ready to use them.

Vegan BBQ Chicken & Avocado on Crispy Garlic Butter Ciabatta Bread

Yields 1 sandwich

• 1 Ciabatta Roll
• 15g vegan butter (1 Tbsp)
• 1 smallish clove of garlic, pureed
• pinch of salt, I used smoked
• some finely chopped fresh parsley (or dried)
• 30g vegan chicken strips, defrosted.
• 2 Tbsp BBQ sauce
• pinch of cayenne pepper - optional
• slices of avocado
• shredded iceburg lettuce

First make your garlic butter: Simply mix together the butter, garlic, tiny pinch of salt and the parsley (just add enough parsley that it looks nice and speckled). Split open the ciabatta roll and spread both sides with the garlic butter:


Preheat your oven to 200C / 400F. While it's heating up slice up the vegan chicken strips as thinly as you can:


Place the ciabatta on a baking sheet and bake for 7 - 10 minutes. You want the butter to be melted and bubbly and the ciabatta to be lightly golden and crisp around the edges. While they are cooking slice up your avocado and finely chop the lettuce into small strips. 


In a small saucepan add the BBQ sauce and the "shredded chicken" and heat, stirring now and again until it comes to a simmer. I didn't notice how long mine was on the heat here - no more than 5 minutes. If the sauce starts to stick the bottom of the pan you are done, just take it off the heat.

Now simply pile the BBQ chicken onto one side on the roll and the lettuce and avocado on the other. I also added a tiny splash of hot water to the saucepan I cooked the chicken in and stirred and scraped the pan with a spatula to get some of the cooked on sauce off and spooned a tiny bit of this over top of the chicken, just to make it a little more saucy ;-)

Carefully sandwich this baby together and enjoy! Oh, one more thing...you're going to get messy. Don't avoid it just grab a stack of napkins. As well as sitting in my hot kitchen in short sleeves in the winter I was also sitting there with BBQ sauce all down my face and all over my hands. Embrace it. It's ok!! Just don't make these for a date ;-)

Zucchini, Lemon and Dill Soup with Orzo

Creamy Zucchini, Lemon and Dill Soup with Orzo. Vegan.
Perfect with some crisp 'buttery' garlic toasts!

Here's another creamy soup to warm you up this winter, with summery flavours to boot! It's gotten particularly cold here in Ireland, we may even see some snow this evening - I hope so as I haven't actually seen a single snow flake yet this winter! The Canadian in me is in withdrawal :-(

I've been making this soup for quite a while now, you'll have seen it months ago on the daily blog. It gets it creaminess from adding a little potato, a great little trick in making creamy vegan soups! It has great flavour from the lemon and dill and the orzo in there really helps give this soup some body. It's become one of our favourite soups and is particularly handy if you find yourself with a few zucchini's that need using up.

Some recipe notes

♥ I made my vegetable stock with 3 teaspoons of Marigold Vegan Bouillon.
♥ You don't have to be overly exact with the weight of zucchini. I've made this with up to 750g of zucchini and when I've only had about 550g. 
♥ I've given a measure of garlic instead of cloves as the size of cloves can vary wildly. This would be about 5 or 6 small to medium size cloves. The soup is not overly garlicky though.
♥ If you have leftovers the soup will get very thick the next day. Simply thin down with a bit of hot water while reheating and re-season with salt and pepper. All of these photos were actually taken of my leftovers :-)

Creamy Zucchini, Lemon and Dill Soup with Orzo. Vegan.

Creamy Zucchini, Lemon and Dill Soup with Orzo

Serves 4

• 750g zucchini, sliced and quartered (about 3-4 medium)
• 2 Tbsp extra virgin olive oil
• 160g onion, chopped (about 1 large)
• 200g potato, peeled and sliced thin (about 1 medium)
• 1 Tbsp chopped garlic
• 1 tsp dried dill
• 800ml vegetable stock (3 1/4 cups)
• ½ tsp lemon zest
• 2 Tbsp fresh lemon juice
• Black pepper
• 100g orzo (dry weight, or 1/2 cup)

Heat the oil and fry the onion with a few grinds of black pepper until soft, stir in the garlic and potato and fry for 2 minutes. Stir in the stock, dill and zucchini, bring to the boil, cover and simmer for 15 minutes or until the potatoes and zucchini are really soft, the potato should be falling apart. Stir in the lemon and zest and juice. Let cool slightly.

Meanwhile get the water on for the orzo then cook in salted water according to package instructions until tender. Drain well.

Transfer the soup to a blender and blitz until smooth. Return to the pot and bring back to a simmer. Stir in the cooked orzo, taste and season with salt/pepper/lemon juice as you see fit.

This soup goes beautifully with these pan grilled garlic toasts. Simply slice a French baguette on the diagonal, spread with vegan butter on both sides and place on a hot grill pan, cooking both sides until golden then remove and rub a clove of garlic all over one side.
